These Sweet Potato Pancakes are a twist on a traditional potato pancake, or latke, & are the perfect homemade recipe for the holidays! Latkes are savory potato pancakes that are typically fried in oil. Traditionally, they’re eaten on Hanukkah, but eat them any time of year. Just use Russet potatoes, sweet potatoes, flour (can substitute for whole wheat, almond or oat flour) eggs, baking powder & olive, avocado or vegetable oil. I love to dip these in applesauce, sour cream or mashed avocado.
