Easy - 🍮 Crema Pasticcera (Italian Pastry Cream) Prep Time: 15 mins Cook Time: 10 mins Total Time: 25 mins Yield: ~3 cups Course: Dessert Cuisine: Italian Method: Stovetop 🛒 Ingredients 1 cup milk, divided (preferably whole or 2%) 1 cup heavy whipping cream 2/3 cup granulated sugar (For a lightly sweet custard, use only 1/2 cup sugar) 5 large egg yolks (room temperature) 1/2 tbsp all-purpose flour 2 tbsp cornstarch 2 tbsp salted butter 1/2 tsp vanilla extract 🥣 Instructions 1️⃣ Heat Milk & Cream In a medium saucepan, whisk together 1/2 cup milk, 1 cup heavy cream, and sugar. Cook over medium heat, stirring constantly, until milk begins to steam (almost boiling), about 4–5 minutes. Remove from heat and set aside. 2️⃣ Prepare Egg Mixture In a large bowl, whisk together egg yolks, flour, cornstarch, and the remaining 1/2 cup milk until smooth. 3️⃣ Temper the Eggs To prevent curdling, whisk a few tablespoons of the hot milk mixture into the egg mixture. Then, pour the tempered egg mixture through a fine mesh strainer back into the saucepan with the rest of the hot milk. 4️⃣ Cook the Custard Cook over medium heat, stirring constantly, until mixture comes to a simmer, about 5 minutes. Simmer for 1 minute to thicken, then remove from heat. 5️⃣ Final Strain & Flavor Strain the custard through a fine mesh strainer into a metal or glass bowl set over an ice bath. Stir in the butter and vanilla extract. 6️⃣ Chill Press a piece of plastic wrap directly against the surface of the pastry cream to prevent a skin from forming. Refrigerate until completely cool, about 2–3 hours. 7️⃣ Storage Store in a covered container in the fridge for up to 5 days. Notes & Tips Adding salted butter at the end enhances flavor — if using unsalted butter, add 1/8 tsp salt to the milk & sugar mixture. Use room temperature eggs to reduce the risk of curdling. Stir constantly to prevent burning on the bottom of the pan — it can happen quickly! For extra flavor, use vanilla bean in addition to extract: Slice vanilla bean open, scrape the seeds, and simmer it with the milk. If the custard becomes too thick, whisk in a bit of extra milk. Do not freeze this custard — texture will break down due to the cornstarch.
