🔥☁️Cauliflower Loafs☁️🔥 Batter: In a bowl, beat 2 eggs with 1tbsp. Greek yogurt , salt, pepper and mix well. Cut the cauliflower into thick slices. Dip them in the batter. Fry the breaded cauliflower for 5 minutes on each side, until they are crispy. Transfer the to a baking dish, place a slice of tomato and a slice of mozzarella on top of each slice. 30min · 8 servings 😍Low-Carb Auberginen Cannelloni 😍 Bei der Füllung könnt ihr euch natürlich austoben, ich habe Spinat & Käse gewählt 🤩👌🏼 👉🏻 Ergibt ca. 8 Stück: 1 mitteglgroße Aubergine, ca. 80g Frischkäse, junger Blattspinat (ca. 50g), 50g Gouda (Scheibe), 50g Gouda (gerieben), 400ml passierte Tomaten, frischer Basilikum, Salz, Pfeffer Die Aubergine in dünne Scheiben schneiden, mit Salz bestreuen und ca. 10 Minuten zur Seite stellen. Derweil die passierten Tomaten mit Basilikum, Salz und Pfeffer vermengen. Dann den Ofen auf 180°C Umluft vorheizen, anschließend die Auberginen mit einem Küchentuch abtupfen, mit Frischkäe bestreichen. Die Goudascheibe in 8 Stücke schneiden und jeweils ein Stück auf die Auberginenscheiben legen. Dann mit Blattspinat belegen und zusammenrollen.

➡️INGREDIENTS: 4 eggs, 200g cottage cheese, 1 small zucchini, 1 large tomato, salt and pepper to taste, 2 tbsp olive oil, 4 tbsp grated cheese, 1 tbsp fresh parsley ➡️PREPARATION: Preheat the oven to 180°C and prepare a heatproof dish. Dice the zucchini, lightly salt, set aside for a moment, and drain excess water. Dice the tomato and also drain excess water. In the heatproof dish, crack the eggs, add cottage cheese, vegetables, salt, pepper, olive oil. Mix everything thoroughly. Sprinkle the entire mixture with grated cheese. Place the dish in the preheated oven and bake for about 35-40 minutes until the bake turns a dark golden color. Remove from the oven, wait a moment for it to cool slightly.
