Line a 20cm (8inch) round cake tin with baking paper. Make layers in this order: Tortilla, Enchilada Sauce, Chicken, and Mozzarella. Continue the layer process until all the ingredients are used. Bake until the cheese is completely melted and the sauce bubbling, about 30 minutes.

CREAMY RICE Serves 6. ⅔ cup (125g) short grain rice ⅓ cup (85g) sugar 1 litre milk 2 tbsp. (30g) butter In a large saucepan bring all the ingredients to the boil. Reduce heat and simmer until the rice has absorbed all of the milk. This will take approximately 1–1½ hours so stir continuously to avoid the rice sticking to the bottom of the pan and burning. Flavour with various spices, nutmeg and cinnamon are both delicious!
