Herbsaint Champagne Cocktail ~ Herbsaint has a long and storied history in New Orleans, serving as the only acceptable replacement for Absinthe once that controversial concoction was banned in the United States. To fill in the gap left in the Sazerac recipe left by Absinthe, New Orleanian J.M. Legendre created Herbsaint based on a French recipe he encountered during World War I.
