Ingredients:
2 medium beets (peeled and cubed)
3 tbsp olive oil (divided)
Salt & pepper to taste
2 large carrots (sliced)
2 tbsp maple syrup
4 oz burrata cheese
2 cups arugula or mixed greens
1/4 cup toasted walnuts
Balsamic glaze for drizzling
Instructions: Preheat oven to 400°F. Toss beets with 1 tbsp olive oil, salt, and pepper. Roast for 30-35 mins. In a separate pan, toss carrots with 1 tbsp olive oil and maple syrup; roast for 20 mins. Arrange greens on a serving platter, add roasted beets, carrots, and burrata. Top with walnuts and a drizzle of balsamic glaze.
