* 3 lbs. ripe plum tomatoes, halved
  • * 1/4 cup + 2 tbsp. olive oil
  • * 2 cups chopped yellow onions
  • * 6 garlic cloves, minced
  • * 1/4 tsp. crushed red pepper flakes
  • * 1 (28 oz) can whole plum tomatoes, with juice
  • * 4 cups fresh basil leaves, packed
  • * 1 tsp. fresh thyme leaves (or 1/2 tsp. dried)
  • * 4 cups veggie stock (homemade or store bought)
  • * Kosher salt and fresh ground black pepper
