Low carb brownie recipe with zucchini

Serving Size: 8 servings
1 cup zucchini (finely grated);
3 tablespoons of coconut oil;
3 tablespoons of ghee (melted) butter;
1/4 cup of coconut or demerara sugar;
4 packets of stevia sweetener;
1 tablespoon of vanilla essence;
3/4 cup of Brazil nuts;
1/4 cup of homemade coconut flour;
1/3 cup of 100% cocoa powder;
1 pinch of salt.
Grate the zucchini on the fine grater. Mix all ingredients in a bowl until a smooth, moist mass is made. If you need to add a little more water until you reach the right spot. Grease a mold with coconut oil and sprinkle with cocoa powder. Preheat the oven for approximately 10 minutes at medium temperature. Bake for about 15 to 20 minutes. Serve! The consistency will be creamy inside.
