(4 servings) SHAWARMA * 400g oyster mushrooms * 2 tbsp canola oil * 1 tsp ground cumin * 2 tsp dried oregano * 2 tsp smoked paprika powder * 2 tbsp yeast flakes * 3 tsp cornstarch * 1 tsp salt * 1 tsp garlic powder RICE * 1 piece red onion, chopped * 2 cloves of garlic, chopped * 100g vegan butter * 1 pinch of cinnamon * 1 pinch of coconut blossom sugar * 1,5 tsp salt and pepper * 1/2 tsp turmeric * 1 tsp cumin powder * 2 cups basmati * 3 cups water GARLIC YOGHURT * 200g soy yogurt * juice of one lemon * 2 cloves of garlic, grated * salt and pepper to taste * 1 tbsp light balsamic vinegar * 2 tsp maple syrup PREPARATION RICE 1️⃣In a pot, heat vegan butter and fry the onion and garlic for 3 min. CUCUMBER AND BEETROOT SALAD * 300 g cooked beetroot, sliced • * 2 small cucumbers, sliced • * 1 red onion, sliced • * 1 tbsp chopped dill • * 1 tbsp chopped parsley • * 1 tsp nigella seeds (optional) • * Handful of mixed salad leaves • * Feta cheese (optional) Dressing • * 30 ml olive oil • * 1 tbsp white wine vinegar • * 1 garlic clove, crushed • * Salt and pepper In a large bowl, combine all the ingredients. Meanwhile, whisk olive oil with vinegar and garlic. Season dressing to taste with salt and pepper. Combine with the vegetables and mix well. Top with salad leaves. We're loving this simple, yet gorgeous, herby, Chickpea, Beet and Feta Salad by @gayanefood. Look at how all of the colors pop! Who's going to make this tonight? You could even batch make this and make enough for leftovers with the hearty ingredients. Instruction : * 1x 400g tin of chickpeas, drained * 300g cooked beetroot, diced * 1/2 large cucumber, diced * 150g feta cheese, diced * 80g pitted olives (optional) * 1 red onion, finely chopped * 30g fresh dill, chopped * 40ml olive oil * Juice from one lemon * Salt and pepper to taste In a large bowl, toss together all the ingredients.
