Almond Croissant Muffins | Easy Snack Recipe | Vegan Baking
A little while back I made an Almond Croissant Protein Cookie and you guys went absolutely nuts for it so I wanted to double down on the flavour and bring you a recipe I think you'll love just as much! These muffins are low calorie, low fat, and have a good amount of protein for a quick snack or afternoon sweet treat. I used fava bean protein which is nearly flavourless so the almond extract and almonds could shine. I hope you love 'em!

1hr · 1 serving Ingredients: • 1 Cup Flaxseeds • 1/3 Cup Psyllium Husk • 2 Tsp Baking Powder • 1 Cup Hot Water Optional: • Pinch of Salt • 1 Tsp Cumin, Vegetable Stock Seasoning or Curry Powder Method: • 1. Preheat oven to 180°C and line a baking tray. • 2. Prices flaxseeds until fine and flour-like. Add psyllium husk, baking powder and optional seasonings and process until fine. • 3. Transfer to a bowl, pour in hot water and stir. Once the mixture begins to hold, knead into a ball (dough will be on the wetter side). • 4. Place dough on the lined baking tray and mould into a loaf. Feel free to mould into other shapes such as buns, but be mindful of the difference in baking time. • 5. Bake in the oven for 50-60 minutes, or until outside is crispy and a skewer comes o
