Makes 4 Ciabattas 350g Bread Flour 315g water 7g salt *3g Instant Yeast 10g Olive Oil *For the sourdough version, replace instant yeast with 70g levain (a fed sourdough starter added to the dough at peak) METHOD Mix water, yeast, salt, olive oil and flour Rest for 30min Perform 1 set of stretch-and-fold Rest 30min. 2-3 Coil Folds with 30min rest between each fold. place the dough in the fridgeovernight cold proot. The next day, tip the dough out onto a well-floured surface Divide into 4 portions and proof the dough Preheat oven at 250C. Final proof until almost double. Bake at 250C for 15 min with steam (place a tray of boiling hot water beside or under your ciabatta) Remove steam and turn down the oven to 210C Continue baking for another 10 min Enjoy your favourite s
