Vegan Red Thai Curry, full of vegetables and crispy tofu -This was delicious! We didn't add the tofu. We did add the entire can of coconut milk and cups of chicken broth. We then added vermicelli noodles.
Red Curry Lentils — Pinch of Yum I made this for my vegan daughter and she raved about it.said it was restaurant quality. It's fairly easy, and I made it early in the day and stuck it in the crock pot to keep warm. Delicious with brown basmati rice.
Sesame Ginger Tofu and Veggie Stir Fry - Loaded with so much flavor and completely vegetarian friendly! Green beans are in the pic but not under recipe directions. I left them out Takes a bit of time to fry tofu but very good.
