It’s a staple in Bulgarian Cuisine and something I have been enjoying all my life! Ingredients: 2 medium sized eggplants 1 red bell pepper 3 garlic cloves 1 tbs parsley 1 tbs dill 2 tbs apple cider vinegar 3 tbs olive oil 1 tsp salt plus more for sprinkling on the eggplants Method: 1. Preheat oven to 425 F; 2. Cut eggplant lengthwise, score and sprinkle salt generously and let it sit on paper towels to release its moisture; 3.
