Crockpot Burrito Bowl
Crockpot Burrito Bowls * 2 large chicken breasts * 1 cup uncooked jasmine rice * 1 cup chicken broth * 1 small can of green chilis * 1 can black beans * 1 bell pepper, diced * 1 can fire roasted corn * 1 can diced tomatoes * 1 packet taco seasoning 1. Add diced tomatoes, chicken broth, chicken, and half a packet of taco seasoning to a large crockpot 2. Cover and cook on low for 3 hours 3. Then add green chilis, drained black beans, drained fire roasted corn, bell pepper, rice and other half of taco seasoning 4. Cover and cook on low for an additional 2-3 hours. Check the rice every hour and stir it to make sure it does not burn. 5. After 2-3 hours remove the chicken and shred it 6. Divide into meal prep containers if using it for a prep and serve with cilantro and plain greek yogurt or
