Satay Inspired Tofu Noodle Salad with over 40g plant-based protein
by @sepps_eats INGREDIENTS: (3 meals) 2 blocks firm tofu (2 x 280g) 1 tbsp olive oil 2 tbsp soy sauce 2 tbsp cornflour 1 large carrot handful cherry tomatoes 1/4 red cabbage 200g edamame beans 1 avocado sesame seeds crushed peanuts 400g noodles or rice of choice SAUCE: 2 heaped tbsp peanut butter 2 tbsp agave 2 tbsp rice vinegar 2 tbsp soy sauce 1 lime dash water Slice the tofu into chunks, cover in oil and soy sauce and mix, then add the cornflour and shake to cover. Auberginen-Schnitzel
𝒁𝒖𝒕𝒂𝒕𝒆𝒏: 2 Auberginen 70g Mehl Salz, Pfeffer, Paprika, Chili 100-150ml Wasser 100g Semmelbrösel 3 EL Olivenöl zum Braten 𝒁𝒖𝒃𝒆𝒓𝒆𝒊𝒕𝒖𝒏𝒈: Die Auberginen mit einer Gabel einstechen und bei 180 Grad/Umluft für ca. 40 Minuten rösten. Jetzt wird die Haut der Aubergine abgezogen und sie wird etwas flach gedrückt. Aus Mehl, den Gewürzen und Wasser wird eine Mehlmischung hergestellt, in der die Auberginen getunkt werden und anschließend in den Semmelbröseln. Jetzt müssen die Auberginen nur noch in der Pfanne herausgebacken werden. Guten Appetit! ❤️
