Pork jerky or Bakkwa (肉乾)is popular in Singapore and Malaysia where it is usually eaten during Chinese New Year. Last year I made a batch of Bakkwa using very lean meat and it turn out to be very dry and hard.(I thought I didn't want to take too much animal fat! Controlling cholesterol level hehe)). 2 pork tenderloins (3# ea) sliced 1/4" thick small can crushed pineapple 6 garlic cloves 10 jalapeno slices & some juice Blend 3 ingredients above in food processor, add 2 bottles teriyaki marinade (12 oz ea) 10 oz bottle soy sauce 2 T brown sugar 1/8 C worchestershire sauce 1/8 C white vinegar 1 T black pepper 1 tsp onion powder 1 T crushed red pepper flakes 1 1/2 tsp jerky cure 1/4 tsp Jim's habanero powder Marinate overnight, smoke in smoker without wood. Don't overcook!
