how long to marinate beef jerky

Based on personal experience, I'd suggest marinating beef jerky for at least 2 hours. In terms of maximum time, I'd suggest marinating for 24 hours. This time is enough for salt penetration, which is the main purpose of marinating beef jerky (to fight off microbes). Truth be told, most marinade ingredients will only penetrate ~1/8" into meat. Where-as Salt is capable of penetrating about 2/3" in a 24 hour period.
