Canned Pico de Gallo I was concerned that the water bath would ruin the taste, but the result was quite the opposite! The flavor after canning was beyond. I warn you that this recipe is SERIOUSLY addicting. I made a double batch that yielded about 5 pint jars. I used both red and yellow onions, and red and yellow bell peppers. I do suggest tasting and adjusting the sugar/salt balance - I ended up adding just a little more sugar, and it made all the difference in the world.
