Cheesy Spinach Casserole like at the Chinese Buffet- I made this without thawing the spinach. I simply added frozen spinach to the pot with the melted butter while the cheeses melted and cooked a little to evaporate some juice. It was too creamy for me though. I will leave out the queso blanco velveeta next time.
Ina Garten's Creamed Spinach Gratin. Michelle's notes: made for Thanksgiving 2015. YUM. I halved the recipe since there were so many sides already, but this was a winner. Might have used a little more cheese than was strictly called for, and I used grated parmesan instead of freshly-grated parm, but I will definitely make this again!
