These were absolutely delicious. Alright in a bowl. First going to season it up with my buffalo blend by really well on all sides. I'm using chicken thighs. I left some of the fat on because fattest flavor. In my opinion. If you want you could take it off. Alright we got some wing sauce and some buttermilk. The full recipe's going to be on our website. I'm going to place it in the comments. Place it in a tray. Now we're going to marinate this. You can marinate it overnight or at least 2 hours. But I'm going to be using the Avid Armor's marinade function. This allow to dry the marinade deep into the meat. Now I will season up that flour. Alright once you do now we're going to start dredging the chicken. Just like so. I'm going to do a double dredge. Dip it in there. Dip it back in the marinade and dip it back in there so it builds up. Now avocado oil. Gonna fry this at 350 degrees. Around three and a half minutes. So what I'm doing here just dipping it you know three times. This way the the outer crust sticks to the meat. It doesn't go all over. Now it's a three and a half minutes. This is how they look like. I'm going to pull them off. Now let that oil heat up again to three fifty. Now we're going to refry these again. This going to give them like an extremely crispy fried. So when you add the sauce they're not going to be too soft. It's not going to become a mush. So this is after another three and a half minutes. Now let's toast up the brioche buns with a little bit of butter. You can use mayonnaise so you don't have to use anything. Little avocado oil going in. And Frank's Red Hot again. Butter. Honey, Now we're going to be stirring this on medium heat. Until it bubbles up. Then we're going to turn it off. Now everything's all incorporated. Uh now your chicken I'm going to start brushing it. If you toss it it might break the outside. The breading so just go ahead and baste it just like so. After this we're going to assemble the sandwich. But the double fried technique. Give it a go if you haven't. Makes it incredibly crispy. Little mayo goes down and I like pickles custard of the fat. Gives it a really nice balanced flavor. It's up to you if you don't want to add these. Chicken right over the top and then the top. So these came out absolutely fantastic. Gonna give them a go.
