70 reactions · 20 shares | If you have never made your own ice creams then you are seriously missing out! You can also make sure they only contain good quality, wholesome ingredients. These homemade almond magnums are the perfect summer treat that contain only 6 ingredients. The ice cream is creamy and delicious with an outer shell of thick dark chocolate and chopped almonds. They are mini too - so the perfect size for guilt-free indulgence 😋 ✅ Save to try Ingredients for the filling: 1 cup cashews, soaked 400ml can of full fat coconut milk* 3 large medjool dates, pitted 2 tbsp almond butter Other ingredients 300g dark vegan chocolate Chopped almonds *try and use an organic full fat coconut milk if you can. One with no stabilisers and emulsifiers ( I use @bionaorganic - no affiliation - but it’s definitely my favourite as it’s just organic coconut and water). Makes 6-7 mini magnums 1, Soak the cashews in boiling water for 30 mins then drain and add to a blender with the other filling ingredients and blend until smooth. 2, Pour into lolly moulds and put in the freezer to set for at least 4 hours 3, Melt the chocolate and dip each lolly then add a few chopped nuts. Put back in the freezer to set (this will only take a few mins). They will keep for at least a month in the freezer. Recently matcha is an extremely popular ingredient and a particular trend is a drink combining fresh coconut and matcha. I share with you how I make my own fresh ice cream, which results in a very satisfying texture that is flexible and spongy, not too hard because my teeth are relatively sensitive. Recipe: 480gr whipping cream 35% 235g whole milk 250g sugar 2gr salt Step 1: use a bowl of ice like I do, add salt to the ice and mix it because it will help the ice take longer to melt. Use a thin ice cream bowl to conduct heat well. Add matcha powder with a small amount of fresh milk, mix until the matcha powder dissolves first, then add into a large bowl including whipping cream, fresh milk and sugar. Step 2: beat the entire mixture with a hand mixer at the lowest speed for 8-10 minutes, the mixture will slightly foam up to 50-80%, then put the entire large bowl in the freezer for about 1 hour. When you take it out, you will see the outer layer is lightly frozen and frosty Step 3: Type at medium to high speed for about 10-15 minutes. Then the mixture will be soft and pliable, not too hard. Put the entire mixture into a glass tray or storage box and store it in the freezer, overnight or for at least 6 hours to get the desired ice cream mixture.
