You can also use freeze dried strawberry powder in the pink dough to give it a strawberry flavour if you’d prefer. Strawberry biscuits Makes: 24 biscuits Ingredients: • 225g unsalted butter (softened) • 150g caster sugar • 1 egg • 1 tsp vanilla extract • 350g plain flour (plus extra for rolling) • 1/2 tsp baking powder • 1/4 tsp salt • Red and green gel food coloring Tools: • Rolling pin • Small heart cutter (for strawberries) • Small star cutter (for leaves) • Baking trays lined with parchment paper Instructions: • In a large bowl, cream together the butter and sugar until light and fluffy. • Add the egg and vanilla extract, mixing until combined. • Sift in the flour, baking powder, and salt. Mix until a soft dough forms. • Divide the dough into two portions: about 2/3 for the red dough (strawberry body) and 1/3 for the green dough (leaves). • Add red food coloring to the larger portion and green to the smaller portion, kneading until the color is evenly distributed. • Wrap both dough portions in cling film and chill for at least 30 minutes. • Preheat your oven to 180°C (160°C fan) or 350°F. • Roll out the red dough to about 5mm thickness and cut heart shapes (these will be the strawberries). • Roll out the green dough and use the small star cutter to create leaves. • Place the red heart shapes on the prepared baking trays. • Press a green star at the top of each heart to resemble strawberry leaves.
