Hash brown nests 🪺🥚🐣🥔
Peel and grate 2 large potatoes, squeeze out as much liquid as possible, then dry on a clean tea towel. Add to a bowl along with 2 tbsp melted butter, salt & pepper then mix. Grease a muffin tin with more melted butter and pack the grated potato mixture into each. Bake at 200°C for approx. 25 minutes. Remove from oven and add a bit of Mayo, parsley and quail eggs into each nest.
Salami Rose Sandwiches🌹
Cream cheese filling: 100g cream cheese 2 tbsp chopped red pepper 1 tbsp chopped parsley 1 tbsp chopped dill 1 tbsp chopped chives 1 tbsp lemon juice Salt and pepper to taste Method: Cut a baguette in slices then push the insides in with a spoon or shot glass. Lightly brush with olive oil and bake for a few minutes on 200C until golden. In the meantime, prepare the cream cheese filling by mixing all the ingredients together. Once the bread is completely cool, spoon 1 tsp of the filling in each baguette slice. Place 3 salami slices slightly overlapping and cut in half. Roll each half separately into a rose and place on top of the cream cheese. Garnish with dill leaves and serve right away.
